FORTUNE COOKIES FOR A HAPPY AND LUCKY NEW YEAR!

Αν σας έχουν καλέσει για Πρωτοχρονιάτικο ρεβεγιόν ή αν ετοιμάζετε εσείς για τους φίλους σας ρεβεγιόν στο σπίτι, νομίζω ότι αυτά τα χειροποίητα Fortune Cookies θα κλέψουν την παράσταση! Ειδικά αν την ''μοίρα'' τους την έχετε καθορίσει εσείς!

(για 12 μέτρια Fortune Cookies ή και παραπάνω, αναλόγως το μέγεθος)



5 κ.σ. βούτυρο (25γρ)
4 ασπράδια αυγού
1 κούπα ζάχαρη
1 κούπα αλεύρι για όλες τις χρήσεις
1/4 κ.γ. αλάτι
3 κ.σ. κρέμα γάλακτος με πολλά λιπαρά
1 κ.γ. αμυγδαλέλαιο
1/2 κ.γ. βανίλια (ή μια βανίλια εμπορίου, την λευκή)

 


Γράψτε τα μηνυματάκια σας και κόψτε τα χαρτάκια σας να τα έχετε έτοιμα.
Προθερμάνετε τον φούρνο στους 200 βαθμούς.

Λιώστε το βούτυρο και αφήστε το στην άκρη. Σε ένα μπολ χτυπήστε τα ασπράδια με τη ζάχαρη για 30 δευτερόλεπτα περίπου. Προσθέστε την κρέμα, το αλεύρι, το αλάτι, το αμυγδαλέλαιο και την βανίλια και χτυπήστε στο δυνατό για περίπου ένα λεπτό. Ρίξτε το βούτυρο και ανακατέψτε να ομογενοποιηθεί. Το μίγμα θα βγεί πηχτό. Χρησιμοποιήστε μια λαδόκολα (βουτυρώστε την για καλό και για κακό παρόλο που δεν χρειάζεται) και ρίξτε μια γεμάτη κουταλιά απο το μίγμα. Απλώστε το και δημιουργήστε μια κυκλική βάση με την βοήθεια του κουταλιού (με το πίσω μέρος) περίπου 15 εκατοστών (λίγο πάνω λίγο κάτω δεν πειράζει). Θα χωράνε 2 με 3 σε κάθε λαδόκολα ανάλογα με το μέγεθος που τα ανοίγετε. Δεν θέλετε να έχετε παραπάνω μπισκοτάκια κάθε φορά γιατί το δίπλωμα πρέπει να γίνεται γρήγορα, πριν προλάβουν να σκληρύνουν. Ψήστε τα για 7-8 λεπτά μέχρι να χρυσίσουν οι άκρες. Βγάλτε τα με μια σπάτουλα με προσοχή, βάλτε το μηνυματάκι σας μέσα και αρχίστε να διπλώνετε τον κάθε κύκλο στην μέση και ξανά στην μέση, γρήγορα πριν σας σκληρύνουν. Πατήστε τις ακρούλες να κλείσουν. Αφήστε τα να κρυώσουν. Ψήστε με τον ίδιο τρόπο τα επόμενα.  


Tips:

• Να έχετε χώρο και καθαρή επιφάνεια για το δίπλωμα των fortune cookies

• Να έχετε ήδη γράψει τα μηνυματάκια της τύχης και μερικά παραπάνω απο όσα υπολογίζατε αν γίνει κανένα ατύχημα και λερωθούν ή σκιστούν
• Πάρτε έναν βοηθό για να μην έχετε άγχος ότι θα σας στεγνώσουν και δεν θα προλάβετε να τα διπλώσετε
• Θα ψιλοκαούν τα χεράκια σας στο δίπλωμα... Οπότε μη σας βοηθήσουν τα παιδιά σας

Fortune Cookies

(makes approximately one dozen cookies, depending on size)

 5 tablespoons unsalted butter, melted
4 egg whites
1 cup sugar
1 cup all-purpose flour
1/4 teaspoon salt
3 tablespoons heavy cream
1 teaspoon almond extract
1/2 teaspoon vanilla extract




Non-stick cooking spray

Preheat oven to 400 degrees and spray baking sheet. Melt butter and set aside. In a large mixing bowl with a whisk or the bowl of a stand-mixer, mix the egg whites and sugar for about thirty seconds. Add heavy cream, flour, salt and almond extract, mixing at a high speed for about one minute. Finally add the melted butter, whisking until batter is just combined. The cookie batter will have the consistency of a thick pancake batter.
Spread about 1 heaping tablespoon in a thin circle on the sprayed cookie sheet. Use the back of a tablespoon to create an even circle, about 6 inches in diameter, a little bigger or smaller is fine. You will get only about two (or maybe three, if you are going a little smaller) cookies on each sheet. You don't want to have any more than three cookies at once, however, because anymore cookies at one time and you won't be able to fold them into the right shape once they've come out of the oven.
Bake the cookies for approximately 7–8 minutes, until edges are golden brown. Take the cookies out of the oven and remove with a spatula, you only have about 7–10 seconds before all the cookies set into their shape, so work quickly. Once the cookie hardens, you cannot fold it. Place a fortune in the center of the circle, fold in half, then fold in half once more, leaving you withe a twice-folded rose-like cookie. Set on a rack or in a bowl to fully cool. Respray the cookie sheet and start the process again.
   






















Tips:
• Have a clean work surface prepped for shaping the cookies
• Have all fortunes ready to go

• Enlist a partner to help fold, especially if you get two cookie sheets going at the same time
• You will probably burn your fingertips a little while folding
