Carbonnade à la flamande! ΛΑΧΤΑΡΙΣΤΟ ΜΟΣΧΑΡΑΚΙ ΜΕ ΜΠΥΡΑ


2 weeks ago, on Thursday,  i was running like crazy to be on time at COOK SHOP to take one red French oven/ enameled cast iron pot (cocotte) that was waiting for me.
Greek Food Blogs created a cooking game which was also a contest for Greek food Bloggers that wanted to participate. All they had to do, was cook in that enameled cast iron French oven, post the recipe and the experience of cooking in a cast iron French oven (cocotte), take part in a draw, and one lucky blogger will win the cast iron French oven. I took part too, so, as was saying i was running like crazy, cause here in Athens we are non stop on strikes, and the traffic jam is unbelievable, so everyone is late for work, they go late back home etc etc...
So... i finally made it back home with the French cocotte ... But i was in such a hurry that i didn't buy all the ingredients to make the recipe. What was the missing ingredient?THE BASIC ONE... the beer (how could i forget the basic ingredient which was the BEER!!???). No worry, i said to myself, i will cook it tomorrow. But then again it was weekend, and usually every weekend i have a small adventure to live. And i did that weekend. Anyway, i finally managed to cook this DELICIOUS RECIPE on Tuesday.

The result was delicious. It was worth waiting to feel that experience... Rich sauce, perfect flavor, soft like butter beef... and crunchy french fries to make a party in the mouth...I wish my English was better so that i could describe to you the whole experience... So i came to this result: No matter how crazy your everyday life is, enjoy every bite of it and search for the small pleasures in life. A good meal is one of them.



Carbonnade à la flamande recipe

You will need (DON'T FORGET THE BEER!)

500 g cubed stewing/braising beef
2 slices bacon, chopped
3-4 medium onions, sliced
1/2 tablespoon brown sugar
1/2 tablespoon flour
1 bottle Belgian ale
500 ml strong beef broth/stock
1-2 bay leaves
pinch of thyme (fresh or dried)
pinch of allspice (optional)
salt and pepper
chopped parsley
mustard

JESSICA SAYS:
The basic recipe is very straightforward. You can make the carbonnade either entirely on the stove top, or you can start it on the stove and finish it in the oven. If you’re going to use the oven, preheat it to 175C/350F.

Season the beef generously with salt and pepper and brown it on all sides in a dash of oil over medium heat in a heavy-bottomed pot or casserole. When the meat is browned, take it out of the pot and set it aside, then deglaze the pot by adding a splash of beef broth and scraping up any browned bits with a wooden spoon. Add the broth and bits to the beef, then drop the bacon into the pot and fry it over medium heat until it’s brown. Remove the bacon with a slotted spoon and set it aside with the beef.

Put the onions in the pot and fry them gently in the bacon fat until they start to turn soft and golden, which will take about 15 minutes. After the onions have been cooking for a few minutes, sprinkle over the brown sugar, which will help them caramelize slightly.

Once the onions are cooked, sprinkle the flour over them and stir it in (a lot of recipes call for tossing the beef cubes in flour before browning them, but I’ve found that you wind up just browning the flour instead of the meat when you do this). Then add the beef, bacon and any accumulated juices to the onions in the pot.
turn up the heat slightly, and pour in the bottle of ale. It will go all fizzy for a few seconds, but then it will calm down.

Add enough beef broth to cover the meat and onions, along with the bay leaf, thyme, allspice if you’re using it, and some salt and pepper. Bring this to a boil, then cover and place in the oven.

Let it cook for about 2 hours, stirring occasionally, until the meat is tender (if you’re cooking the carbonnade on the stovetop, simply simmer it over low heat for 2 hours; you’ll have to stir it slightly more often to prevent it from burning to the bottom of the pot).

To finish the carbonnade, stir in a handful of chopped parsley and a tablespoon or two of mustard if you’d like.

Carbonnade is traditionally served with boiled potatoes or sometimes buttered noodles.


JESSICA'S ADVICES:
There are just a few things to take note of if you’re making carbonnade. First of all, the beer: If you can get hold of Belgian ale, I highly recommend using it, even if it is more expensive than your average bottle of beer. I used a Chimay Blue the first time I made carbonnade, and it worked so well that I’ve stuck to it ever since. Chimay Blue is a fairly dark ale which gives the carbonnade a pleasing depth. I’ve tried a Leffe Radieuse as well, which is dark and malty, but I thought it gave the carbonnade a slightly bitter edge. If you can’t get hold of Belgian ale, try some other well-rounded copper ale. I would avoid using a stout, however; beef and Guinness stew is great, but that’s not what this recipe is meant to be.






Το Greek Food Blogs είχε μια φοβερή ιδέα. Να μαγειρέψουμε όλοι σε μια κατσαρόλα. Όλοι οι Έλληνες food bloggers... Βρήκε λοιπόν μια κατακόκκινη γαλλική μαντεμένια κατσαρόλα  από το Cook Shop και την έβαλε στο μάτι... της κουζίνας μας!

Σε αυτόν τον πρωτότυπο παιχνίδι/διαγωνισμό, δε θα μπορούσα να πω όχι, αφού και τα παιχνίδια μου αρέσουν και οι διαγωνισμοί και οι κατακόκκινες μαντεμένιες κατσαρόλες. Μακάρι να την κερδίσω και αυτός ο έρωτας της μιας εβδομάδας (ουσιαστικά της μιας νύχτας αφού και νύχτα μαγείρεψα και μόνο μια φορά γιατί δεν πρόλαβα), να καταλήξει μια καυτή μακροχρόνια σχέση, όπου κύλησε ο τέντζερης και βρήκε το καπάκι. Αν όχι... απλώς δεν ήταν γραφτό μας και κάποιος άλλος/η θα την χαρεί! Χεχεχε!

Τι έφτιαξα λοιπόν εγώ; Μια Βέλγικη συνταγή: Carbonnade à la flamande! Ή αλλιώς, ένα λαχταριστό μοσχαράκι με μπύρα! Σιγόβραζε ομοιόμορφα, χύλωσε υπέροχα και έγινε ένα πιάτο ποίημα!



ΛΑΧΤΑΡΙΣΤΟ ΜΟΣΧΑΡΑΚΙ ΜΕ ΜΠΥΡΑ
η συνταγή είναι της Jessica απο το Principia Gastronomica



ΥΛΙΚΑ

500 κιλό μοσχάρι, κομμένο σε μερίδες (εγώ πήρα ''ποντίκι'')
2 φέτες μπέϊκον, σε κομματάκια
3-4 μέτρια κρεμμύδια κομμένα στην μέση και μετά σε λεπτές φέτες
1/2 κ.σ. μαύρη ζάχαρη
1/2 κ.σ. αλεύρι για όλες τις χρήσεις
1 Βέλγικη μπύρα ή Chimay μπλε, ή Leffe κόκκινη, ή Erdinger ή όποια σας αρέσει!
500 ml κύβος/ζωμός βοδινού
1-2 φύλλα δάφνης
λίγο θυμάρι (φρέσκο ή αποξηραμμένο)
λίγους κόκκους μπαχάρι
αλάτι και πιπέρι
ψιλοκομμένο μαϊντανό (προαιρετικά)
μουστάρδα

 Ακολούθησα τις οδηγίες της Jessica κατά γράμμα.
Μπορείτε να φτιάξετε την συνταγή στην κατσαρόλα και να την τελειώσετε εκεί, ή, να την μαγειρέψετε στην κατσαρόλα και να την τελειώσετε στον φούρνο. Σε αυτή την περίπτωση προθερμάνετε τον φούρνο στους 175C.

Αλατοπιπερώστε καλά το κρεατάκι σας και σωτάρετέ το με λίγο ελαιόλαδο σε μέτρια/δυνατή φωτιά, να πάρει χρώμα απο όλες τις πλευρές. Βγάλτε το και κρατήστε το σε μια λεκανίτσα στην άκρη. Ντεγκλασάρετε με λίγο ζωμό βοδινού (ξύνουμε τον πυθμένα με ξύλινη κουτάλα για να πάρουμε τις ουσίες που έχουν μείνει εκεί) και το ρίχνετε στο κρέας. Βάλτε το μπέικον να τσιγαριστεί στο λίπος του χωρίς παραπάνω λάδια και βούτυρα (αρκεί η κατσαρόλα να είναι αντικολλητική). Μόλις πάρει χρωματάκι και γίνει τραγανό, αφαιρέστε απο την κατσαρόλα και ρίξτε το στο κρέας. Ρίξτε τα κρεμμύδια μέσα στην κατσαρόλα που έχετε τσιγαρίσει το μπέικον. Βάλτε και λιγο λαδάκι ή βούτυρο και τσιγαρίστε να πάρουν χρώμα τα κρεμμύδια. Μόλις μαλακώσουν χαμηλώστε τη φωτιά στο μέτριο/χαμηλό και αφήστε τα να καραμελώσουν γυρίζοντάς τα συχνά (τουλάχιστον για ένα τέταρτο με 20 λεπτά). Ρίξτε την ζάχαρη και αφήστε τα λίγο ακόμα. Ρίξτε το αλεύρι (συνήθως αλευρώνουν το κρέας για να γίνει τραγανή η επιφάνεια όταν το σωτάρουμε, αλλά εδώ η συνταγή χρησιμοποιεί το αλεύρι πιο πολύ για χύλωμα) ανακατέψτε και ρίξτε το κρέας με το μπέικον κλπ. Δυναμώστε λίγο την φωτιά και ρίξτε την μπύρα. Θα αφρίσει για λίγο αλλά θα καλμάρει γρήγορα. Αφήστε την να πάρει μια καλή βράση και να εξατμιστεί το πολύ αλκοόλ.  Ρίξτε τα μυρωδικά, αλάτι πιπέρι και τον ζωμό να καλύψετε το κρέας. Βάλτε την θερμοκρασία στο μέτριο/χαμηλό και αφήστε το να σιγοβράζει μέχρι το κρέας να λιώνει και η σάλτσα να είναι μελωμένη. Μέχρι να φτάσετε σε αυτό το αποτέλεσμα, ίσως χρειαστεί να προσθέσετε ζωμό, αν έχει πιει τα υγρά του το φαγητό. Προσοχή να το ανακατεύετε συχνά μη σας κολλήσει. Στο τέλος αν θέλετε προσθέτετε λίγο μαϊντανό και μια κουταλιά μουστάρδα. Σερβίρεται παραδοσιακά με βραστές πατάτες, αλλά του πάνε τέλεια και οι τηγανιτές πατατούλες!
