An Italian Farmhouse to love! Ένα ταπεινό Ιταλικό αγροτόσπιτο...










































Αν και τους Ιταλούς δεν τους έχω σε ιδιαίτερη εκτίμηση, παρόλα αυτά τους το αναγνωρίζω: ξέρουν να πλασάρονται με τσαχπινιά. Χωριά, σπίτια, προϊόντα, αθλητές, τουρισμός, αυτοκίνητα αλλά και γυναίκες! Όλα με το που ακούς ¨Ιταλικά¨, ξέρεις οτι είναι θα είναι όμορφα. Δίνουν πολύ σημασία σε αυτό. Ε, κάπως έτσι και αυτό το... αγροτόσπιτο, στα πλαίσια του οργανωμένου αγροτουρισμού στην Τοσκάνη (και όχι μόνο), έρχεται να πάρει επάξια την θέση του στα όμορφα του Donkey. Γιατί το αξίζει!

Casarecce with eggplants, pomodori and mizithra cheese! Καζαρέτσε με μελιτζάνα, πομοντόρια και ξινομυζήθρα.

Πέρσι όλο το χειμώνα, ανεξαιρέτως τι τρώγαμε μέσα στη μέρα, το βράδυ τρώγαμε μακαρόνια.
Ένα κουτί.
Υπ΄αυτή την έννοια έχω ανεβάσει ελάχιστες μακαρονάδες, σε σχέση με αυτές που μαγείρεψα. Ο λόγος, δεν είναι οτι δεν άξιζαν τον κόπο, αλλά επειδή μαγείρευα τα μακαρόνια βράδυ (αργά το βράδυ, μετά από προπόνηση και πριν από την μεγάλη νύστα) πεινούσαμε τόσο πολύ, που κανείς δεν είχε όρεξη να περιμένει να φωτογραφίσουμε το φαγητό. Επίσης, το τρώγαμε όλο το φαγητό μας με αποτέλεσμα να πάρω εγώ σε ένα χρόνο 7 κιλά και ο ''Λ'' έντεκα. Τα χάσαμε τα κιλά από τότε, όχι όλα εντελώς, αλλά ήρθαμε στα ίσια μας. Μέχρι που μπήκε ο Σεπτέμβρης. Κάπως κάτι μου έκανε που ένιωσα οτι μπήκε το Φθινόπωρο (άσχετα με το κατακαλόκαιρο έξω) και μου είπε το υποσυνειδητό μου οτι Φθινόπωρο=σοκολάτες=κρεπάλες=σάλτσες=ψωμιά=κιλά. Άρχισα πάλι να παίρνω πίσω ό,τι έχασα λοιπόν. Αλλά να σας πω κάτι; Η απόλαυση μιας καλομαγειρεμένης μακαρονάδας όχι απλώς αξίζει τα κιλά και την κλάψα μετά... Είναι πέρα από κάθε αμαρτωλή γεύση. Οπότε ναι. Πληρώνω το τίμημα. Αρκεί να είναι κόλαση ο πειρασμός!

Τα καζαρέτσε είναι είδος ζυμαρικού. Τα ελληνικά στριφτάρια ας πούμε. Τα βρίσκετε δίπλα στις πένες και τα ριγκατόνι!

This recipe is so simple and yet so full of taste and flavors! Not to mention the colors!



Casarecce with eggplants, pomodori and basil recipe

This can be cooked with any kind of short pasta shapes such as penne and rigatoni . This recipe blends the most mouth-watering vegetable combos. Eggplant or aubergine is the guest star in this delicate sauce, which is easy to be made, and that is always a plus in any recipe, don't you agree?

Ingredients

350gr Casarecce pasta
1 red or yellow onion, finely cut
1 or 2 eggplants, cut in small cubes
500 gr pomodori tomatoes, or cherry tomatoes, halved
Olive oil, for frying
salt and fresh grounded pepper
a handful fresh basil leaves, chopped
a handful capers, rinsed (optional)
2 garlic cloves, finely cut
Riccota cheese or Greek soft mizithra cheese (omg!)

Cook your pasta the way you prefer. While you do that, prepare the sauce:

Saute eggplants and onions in some hot olive oil, stirring non stop until softened and turned slightly brown.
Add the baby pomodori tomatoes (or cherry tomatoes,halved) in the saucepan. Stir some more!
Add the garlic. Add the capers if you use any, otherwise, stir to combine until garlic is soft. Taste and season with salt and pepper.
When the Casarecce pasta is ready, rinse it well and then, mix them into the saucepan. Work quickly to combine vegetable sauce with pasta. Serve immediately with fresh cut basil and Greek grated mizithra. Enjoy!



Καζαρέτσε με μελιτζάνα, πομοντόρια, βασιλικό και ξινομυζήθρα

Μια μεσογειακή μακαρονάδα, πολύ νόστιμη, ελαφριά, που γίνεται σε χρόνο dt και έχει χρώμα, βιταμίνες και άρωμα Ελλάδας!

Υλικά

350γρ Καζαρέτσε ή πένες ή ριγκατόνι
1 ή δύο ξερά κρεμμύδια, ψιλοκομμένα
2 μελιτζάνες, κομμένες σε κυβάκια
500γρ (λιγότερα ή περισσότερα εξαρτάται απο εσάς) ντοματάκια πομοντόρια ή cherry, κομμένα στα δύο
Ελαιόλαδο
Αλάτι και φρεσκοτριμμένο πιπέρι
Μια χούφτα φρέσκα φύλλα βασιλικού,
Μια χούφτα κάπαρη, καλά ξεβγαλμένη
Ρικότα ή ξινομυζήθρα τριμμένη


Ετοιμάστε τα ζυμαρικά σας όπως τα φτιάχνετε συνήθως. 
Σωτάρετε τις μελιτζάνες σε ελαιόλαδο και προσθέστε μετά από ένα λεπτό τα κρεμμύδια. Ανακατεύετε συνεχώς μέχρι να μαλακώσουν και ελαφρώς να μαραθούν. Προσθέστε τα πομοντόρια κομμένα στην μέση. Προσθέστε το σκόρδο και ανακατέψτε. Μόλις μαλακώσουν (ντομάτες, σκόρδα) δοκιμάστε και αλατοπιπερώστε. Απομακρύνετε το σκεύος από την φωτιά. 
Σουρώστε τα ζυμαρικά σας και ρίξτε τα μέσα στο τηγάνι με τα σωταρισμένα λαχανικά. Ανακατέψτε γρήγορα και σερβίρετε. Προσθέστε μπόλικα φύλλα βασιλικού και τριμμένη ξινομυζήθρα.  


Αν δεν έχετε πομοντόρια, βάλτε απλές ντοματούλες κομμένες σε κομματάκια. Σε αυτή την περίπτωση απλώς θα έχετε περισσότερα υγρά στην σάλτσα, οπότε θα πρέπει να υπολογίσετε λίγο παρά πάνω χρόνο. Επίσης καλό θα ήταν να προσθέσετε και μια πρέζα ζάχαρη.

If you don't have pomodori tomatoes or cherry tomatoes, you can make the same pasta, using common tomatoes chopped in small cubes. In that case, you may need more time to thicken the sauce because of the tomato liquids. Also you may need to add a pinch of sugar in case the tomatoes are sour.

Lemony Risotto! Ιταλικό Λεμονάτο Ριζότο!

Υλικά

2.5 λίτρα ζωμό κότας
50g βούτυρο ή ελαιόλαδο
1 ψιλοκομμένο κρεμμύδι
1 σκελίδα σκόρδο λεπτοκομμένη
Ξύσμα και χυμό από ένα λεμόνι
400g φίνο ρύζι για ριζότο (τύπου Arborio)
125ml λευκό ξηρό κρασί
αλάτι και πιπέρι

Για την κρεμώδη υφή στο τέλος
Γύρω στα 75g παγωμένο βούτυρο κομμένο σε κύβους
Γύρω στα100g φρεσκοτριμμένη Grana Padano (Γκράνα ή Παρμεζάνα)

Πάρτε μια αντικολλητική ρηχή κατσαρόλα για το ριζοτο. Σε μια άλλη δίπλα ζεστάνετε τον ζωμό και κρατήστε τον ζεστό για μετά. Τσιγαρίστε τα κρεμμύδια στο βούτυρο σε χαμηλή φωτιά μέχρι να ροδίσουν και προσθέστε το σκόρδο. Ανεβάστε τη θερμοκρασία και ρίξτε το ρύζι να τσιγαριστεί μέχρι που όλοι οι σπόροι να έχουν καλυφθεί από το βούτυρο και τα κρεμμύδια. Μπορεί να κάνει ήχους το ρύζι σαν να σπάει. Ρίξτε το κρασί (προσοχή στους ατμούς). Ανακατεύετε μέχρι να εξατμιστεί το πολύ αλκοόλ του κρασιού (όχι να στεγνώσει όμως!). Σιγά σιγά αρχίστε να προσθέτετε τον ζωμό, ανακατεύοντας διαρκώς. Αυτή η διαδικασία θα κρατήσει… κανα 20λεπτο! Προσθέστε το ξύσμα και τον χυμό λεμονιού. Έχετε υπόψη σας ότι το ρύζι τραβάει τον περισσότερο όγκο νερού στην αρχή, οπότε ελέγχετε μην πνιγεί στα υγρά του. Λίγο λίγο θα ρίχνεται το ζωμό, έτσι ώστε να καλύπτετε το ρύζι αλλά όχι να κολυμπάει. Απλώς διαρκώς να το καλύπτει. Μόλις το πιει προσθέτετε ξανά ζωμό κοκ. Το ρύζι θα αρχίσει να γυαλίζει. Δοκιμάστε το ρύζι μέσα στο επόμενο τέταρτο. Το ρύζι θα είναι έτοιμο όταν είναι μαλακό και γυαλιστερό αλλά στο κέντρο είναι ελαφρώς σκληρό. Προσθέστε το βούτυρο και το τυρί και ανακατέψτε. Προσοχή γιατί θα ‘’πετάει’’ διάφορα. Μην σταματάτε να ανακατεύετε. Το αποτέλεσμα θα πρέπει να είναι ένα ριζότο κρεμώδες και παχύ. Δοκιμάστε για αλάτι. Σερβίρεται ζεστό.

2.5 litres good chicken stock50g butter (or a slurp of olive oil)
1 onion, chopped very finely
1 clove garlic, chopped very finely
1 lemon, zested and juiced
400g superfino carnaroli rice (or Arborio)
125ml dry white wine
salt and pepper

for the mantecatura
about 75g cold butter, cut into small dice
about 100g finely grated Grana Padano (or Parmesan)

Have the stock barely simmering on the stove beside your risotto pan. (The choice of a heavy based pan is important for the even distribution of the heat.) For the soffritto, fry the onions in the butter or olive oil very slowly so that it becomes soft and transparent. Add garlic to this. Turn up the heat a little and stir and toast the rice in the pan until the grains are all covered in butter and onion. The rice should make a kind of crackly sound here. Add the wine. The pan should make a steamy sigh here. Stir and reduce until the wine has all but disappeared. From here add the stock in increments, stirring all the time (this will take about 18-20 minutes). And add the lemon juice and zest. The rice will take more liquid at the beginning of the cooking time, so take this into account reducing towards the end. Add the stock a ladleful at a time, so that the rice is just covered but not drowning. Let each ladleful almost be absorbed before adding the next. The grains should get plump and shiny. Test the rice at about 15 minutes in. The rice is ready when it is plump and tender, but the centre of the grain still has a slight firmness to the bite. Take the pan off the heat and let the risotto rest for a minute without stirring. Add the butter and cheese and whisk it in. Get your body behind it, you should hear a ‘thunck, thunck’ as you work the ingredients in the pan. The result should be a risotto that is creamy and rich. Taste and season. Serve the risotto straight away.
