Snert. The Dutch pea soup! Υπέροχη παραδοσιακή Ολλανδική σούπα!




Amsterdam... the place to be! And the Ultimate Dutch restaurant in my opinion!
Το ταξίδι στο Άμστερνταμ θα μου μείνει αξέχαστο. Κυρίως γιατί αυτό το μέρος κατάφερε να με ηρεμήσει πιο πολύ και απο το Kyoto το απόλυτο Zen spot... Aλλη αγάπη και αυτή...
Anyway πιο πιθανό είναι να μετακόμιζα στην Ολλανδία παρά στην Ιαπωνία...
Τα πάντα μου άρεσαν σε αυτή τη χώρα. Τα πάντα.
Και φυσικά, το φαγητό τους. Οκ, μπορεί να μην έχουν παράδοση ή να διακρίνονται διεθνώς για την κουζίνα τους, αλλά όλα ήταν απλώς υπέροχα. Και αυτό νομίζω είναι αρκετό.
Παρακάτω παραθέτω μια συνταγή για μια σούπα με λαχανικά και χοιρινό λουκάνικο. Θεωρείται απο τις πλέον παραδοσιακές τους, η έμφαση δίνεται στην πράσινη φάβα και φυσικά, σε ένα είδος Ολλανδικού καπνιστού χοιρινού το "Gelderse rookworst". Πρόκειται για μια υπέροχη σούπα που δοκίμασα σε ένα υπέροχο εστιατόριο στην οδό Spoui.
Λέω να την μοιραστώ μαζί σας και να σας προτείνω ανεπιφύλακτα να την δοκιμάσετε... έστω και με μικρούς συμβιβασμούς όπως είναι πχ. να βάλουμε το δικό μας χοιρινό λουκάνικο.
Βασικό μέλημά μας σε αυτή τη συνταγή, είναι να πήξει η σούπα. Συγκεκριμένα λένε πως η σούπα είναι έτοιμη... την επόμενη μέρα απο εκείνη που θα την φτιάξετε. Και πως ξέρετε οτι πέτυχε; Αν βάζοντας κάθετα μια ξύλινη κουτάλα στο κέντρο της κατσαρόλας στέκεται μόνη της. Τόσο πηχτή! Ιδανική δηλαδή για κρύους χειμώνες ή για αναποφάσιστους Μάρτηδες...

Real Dutch pea soup is made with pork. It’s called Snert. Snert must be very thick: a spoon should be able to remain upright in the middle of the pan. To reach the preferred thickness you must prepare the soup one day in advance and reheat it very carefully before serving. The sausage which is traditionally added to the soup is "Gelderse rookworst": smoked pork sausage. You can use other smoked pork sausage instead.

Συστατικά

500 gr πράσινη φάβα
Μισό κιλό χοιρομέρι με κόκαλο, ή χορινό μπούτι

100 gram μπέϊκον (όχι καπνιστό καλύτερα)
1 καπνιστό χοιρινό λουκάνικο
2 μεγάλα κρεμμύδια κομμένα σε κύβους

1 μεγάλο καρότο ή 2 μικρά

2 πράσα
1 σελινόριζα
2 μεγάλες πατάτες
1 σέλερι
αλάτι και πιπέρι
2 λίτρα νερό
Ψωμί

Εκτέλεση

Ξεπλύνετε την φάβα. Βράστε νερό μαζί με το μπέικον, το χοιρομέρι και την πράσινη φάβα. Αφήστε το να βράζει και ξαφρίστε το. Αφήστε το να πάρει μερικές ακόμα βράσεις, χύστε το νερό και βάλτε καινούργιο.

Όσο μαγειρεύονται το κρέας με την φάβα, προετοιμάστε τα λαχανικά σας, εκτός απο το σέλερυ. Καθαρίστε τα κόψτε τα σε ισομεγέθη σχήματα (κύβους) πλύντε τα και ρίξτε τα στην κατσαρόλα. Μετά απο μιάμιση ώρα να υπολογίζετε οτι είναι σχεδόν έτοιμη η σούπα, μπορεί να χρειαστεί και παραπάνω. Θα τον ξέρετε όταν η φάβα θα έχει σπάσει.
Όταν φτάσει σε αυτό το σημείο, βγάλτε το κρέας (το οποίο έχει ‘’γίνει’’, αν όχι συνεχίστε το βράσιμο), αφαιρέστε τυχόν κόκαλα κλπ και κόψτε το κρέας σε κομμάτια. Ξαναβάλτε το στην κατσαρόλα. 20 λεπτά πριν κατεβάσετε την σούπα απο την φωτιά, ρίτε το σέλερυ σε κομμάτια και το λουκάνικο σε κομμάτια. Αλατοπιπερώστε. Λογικά θα έχει αρκετό ζουμί δεν θα σας φαίνεται εντελώς πηχτή, αλλά αν μείνει και κρυώσει θα πήξει (να έχει ζουμί αλλά όχι πολύ, διαφορετικά ποτέ δε θα γίνει σουπερ πηχτή όσο κι αν κρυώσει).

Αφήστε την να κρυώσει εντελώς και σερβίρετε την επόμενη μέρα. Θέλει μεγάλη προσοχή στο πως θα την ζεστάνετε για να μη σας κολλήσει. 

Σερβίρετε σε ατομικά μπωλάκια με ψωμί!

Ingredients

500 gram (2 1/2 cup) split peas
1 piece of gammon with bone, or pork hock, about 500 gram

(1 pound), or spareribs, or two pig's trotters
100 gram (3 ounces) streaky bacon or Dutch "sauerkraut bacon": streaky pork, salted but not smoked, preferrably with rind
1 smoked sausage
2 large onions, chopped not too small
1 large carrot

2 leeks
1 celeriac
2 potatoes
1 bunch celery
pepper and salt to taste
2 litre (8 cups/4pints) water to start with
bread or rye bread (pumpernickel), with -if you can get it- slices of "katenspek" (lightly streaked pork, first boiled and then smoked black)


Preparation

Rinse the split. Bring water to the boil with the peas, gammon and bacon. Let it boil and skim off the floating scum. Pour off, rinse again and put peas and meat back on the fire with clean water.
While peas and meat are gently cooking you prepare the vegetables:
Cut the skin of the celeriac, peel the potatoes, and dice celeriac and potatoes. Peel the carrot and dice it. Cut the leeks and wash them. Add the vegetables to the pan and let simmer until the peas are done (one and a half to two hours, the split peas must be broken).
Take the meat out of the pan, remove rind and bones, and cut it in small pieces. Return the meat to the pan. Wash the sprigs of celery, and chop or cut the leaves. Twenty minutes before the end of cooking add the whole smoked sausage and the celery. Taste, finish off with pepper and salt.
The pea soup is still fairly liquid. Let it cool completely and reheat it the next day, or freeze in portions. When you want to freeze the soup, add the smoked sausage when reheating, or divide the sausage in equal quantities over the portions.
Take care when you reheat the soup to do this very gently. 

To serve: In large bowls, with bread.
