Ρουστίκ τάρτα γλυκιάς κολοκύθας με κρεμμύδια & γραβιέρα
Θα
χρειαστείτε
Για την
ζύμη:
250 γρ αλεύρι για όλες τις χρήσεις
2 κ.σ. γιαούρτι διπλοστραγγιστό
Μια πρέζα αλάτι
1/3 της κούπας νερό παγωμένο
115 γρ βούτυρο
Ξύσμα πορτοκαλιού
Για την
γέμιση:
Μια μικρή γλυκοκολοκύθα, την μισή (την άλλη μισή θα την
κάνουμε σούπα)
2 μέτρια κρεμμύδια
Θαλλασινό αλάτι
Πιπέρι φρεσκοτριμμένο
1/2 κ.γ. μοσχοκάρυδο τριμμένο
1 κ.γ. μπαχάρι τριμμένο
Ελαιόλαδο (2 κ.σ. + 2 κ.σ.)
2 σκελίδες σκόρδο, ψιλοκομμένες
Θυμάρι και ρίγανη
Μια κουταλιά της σούπας μαύρη ζάχαρη
1 αυγό, ελαφρώς χτυπημένο
Λίγη τριμμένη γλυκειά γραβιέρα, όπως γραβιέρα Νάξου
Ανακατεύουμε το αλεύρι με το αλάτι. Προσθέτουμε το παγωμένο
βούτυρο σε κυβάκια και με το χέρι ανακατεύουμε μέχρι να γίνει σαν βρεγμένη
άμμος. Προσθέτουμε το ξύσμα, το γιαούρτι και ξαναανακατεύουμε με το χέρι να
ομογενοποιηθεί. Ρίχνουμε και το νερό και ρίχνουμε άλλο ένα ανακάτεμα. Βάζουμε
ένα σελοφάν και το βάζουμε στο ψυγείο για ΤΟΥΛΑΧΙΣΤΟΝ ΜΙΑ ΩΡΑ.
Κόβουμε την κολοκύθα κατά μήκος. Με ένα κουτάλι την
ξεσποριάζουμε. Την πασπαλίζουμε με αλάτι θαλασσινό και ελαιόλαδο. Την ψήνουμε
για περίπου 40-50 λεπτά στους 180, μέχρι να μαυρίσει στις άκρες και να μαλακώσει.
Μόλις κρυώσει, αφαιρούμε την ψίχα και την κρατάμε σε ένα μπωλάκι. Ρίχνουμε τα
καρυκεύματα. Ρίχνουμε το σκόρδο. Ανακατεύουμε. Κόβουμε τα κρεμμύδια σε ροδέλες.
Λίγα τα τσιγαρίζουμε σε λίγο λάδι σε χαμηλή φωτιά μέχρι να μαραθούν και τα
υπόλοιπα τα αφήνουμε ως έχουν. Τα τσιγαρισμένα τα ανακατεύουμε με την κολοκύθα.
Βγάζουμε το ζυμάρι. Με το
χέρι το ανοίγουμε σε δίσκο, λεπτό σχετικά, μισό πόντο. Ριχνουμε την γέμιση
αφήνοντας 2 εκατοστά απο τις άκρες. Στρώνουμε
την γέμιση κολοκύθας. Διπλώνουμε τις άκρες του ζυμαριού προς τα μέσα. Ρίχνουμε
από πάνω τα ωμά κρεμμύδια. Περιχύνουμε με δυο κουταλιές ελαιόλαδο από πάνω. Πασπαλίζουμε
με μαύρη ζάχαρη. Χτυπάμε ένα αυγό ελαφρώς και με ένα πινελάκι περνάμε το
ζυμάρι. Ψήνουμε στους 180 για περίπου 40 λεπτά στις αντιστάσεις χαμηλά στη
σχάρα, μέχρι να ροδοκοκκινήσει. Βγάζουμε
από τον φούρνο και πασπαλίζουμε με λίγη τριμμένη γραβιέρα όσο είναι ζεστό.
Roasted butternut squash galette with onions & gruyere
You will need

A pinch of salt

115g cold butter

A small butternut squash, half of it (with the other half you can make soup!)
2 medium onions, cut in rings
Salt / Fleur de sel
Fresh ground pepper
1/2 tsp grated nutmeg
1 tsp ground allspice
Olive oil (2 tbls +2 tbls)
2 garlic cloves, finely chopped
Thyme and oregano
1 tablespoon brown sugar
A small butternut squash, half of it (with the other half you can make soup!)
2 medium onions, cut in rings
Salt / Fleur de sel
Fresh ground pepper
1/2 tsp grated nutmeg
1 tsp ground allspice
Olive oil (2 tbls +2 tbls)
2 garlic cloves, finely chopped
Thyme and oregano
1 tablespoon brown sugar
1 egg slightly beaten
Some grated sweet gruyere/ Greek Naxos gruyere
Mix the flour with the salt. Add the cold butter into small cubes and mix by hand until it becomes like wet sand. Add the zest, yogurt and mix again until everything is combined. Mix in the water and stir again. Put cellophane over the dough and refrigerate for at least one hour.
Cut the squash lengthwise. Use a spoon to throw away the seeds. Sprinkle with the sea salt and 2 tbls olive oil. Bake for 40-50 minutes at 180 C degrees until it turns brown at the edges and soft inside. Once cool, remove the pith and keep in a bowl. Add the spices. Add the garlic in. Stir to combine. Cut the onions into rings. Sauté some of them with 2 tbls olive oil until soft and leave the rest as they are. Mix the sautéed onions with the pumpkin puree and keep the raw one for later.

Take the dough off the
refrigerator. Use your hands to make
a disk with the dough, the thinner the better but not too thin (about 1/2cm). Pour the filling in, leaving
2 cm from the border. Spread
the filling in. Fold the border
over the squash mixture pleating the edge to make it fit. Lay over the raw
onions. Drizzle
with a tablespoon of olive oil. Sprinkle with brown sugar on
top. Brush the dough with the beaten egg. Bake at
180C, for 40 minutes on the lowest level until it turns golden brown and crispy! When
ready, take it off the oven and while it is still hot, sprinkle some cheese
over the galette!
