LEFKADA... MAMA MIA!!!

Total blue.


 


 

 Φέτος λέω να κάνω διακοπές. Πραγματικές διακοπές. Υπνος, φαγητό, μπάνιο... κλπ κλπ! Δεν μπορούσα να διαλέξω ανάμεσα στην αγαπημένη μου Φολέγανδρο και την καταγάλανη Λευκάδα, οπότε σκέφτηκα να πάω απο λίγες μέρες και στα δύο...

(παρά την ταλαιπωρία, το ένα στο Βορρά και το άλλο στο Νότο... δε βαριέσαι!...)

Βασική προυπόθεση βέβαια, είναι να έχουν πάει όλα καλά... να είμαστε όλοι μας καλά (δίνω για 2o Dan...)  ''...για να μπορούμε να χαιρόμαστε όλοι μας κι αυτό το καλοκαίρι...'' που έλεγε και ο γλάρος.

 Αν όλα λοιπόν πάνε καλά... θα μπορέσω να δώ αυτό το οινοπνευματί απο κοντά... !!!!

FOLEGANDROS ISLAND

It's not the first time i write about Folegandros Island.
So close to famous Santorini, and so far away from everything!
It's one of the most romantic Islands of Cyclades, including Serifos, Symi, Amorgos, Astypalea, Syros and Milos.
Folegandros is so unique, wild and beautiful, that you must go back there once again... (and again, and again...)

This brand new studio complex PROVALMA is built on the top of the cliff, of Ano Meria in Folegandros Island... I loved loved loved the decoration, i loved every room and every little detail. Minimal, cute and beautiful... So lucky i am gonna stay there for my holidays (even if it's only for a few of days...)!!!

Gunsmoke Slaw recipe! Μια εύκολη, γρηγορη και νόστιμη συνταγή με ξεροψημένες πατατούλες φούρνου και πικάντικο λάχανο

Μια εύκολη συνταγή, απλή και νόστιμη!

Allotment 2 kitchen is one of my favorite blogs, not only for the interesting recipes but also because the author of the blog, Mangocheeks, is a lovely and generous person. Check out for more recipes and tips!

Gunsmoke Slaw
2 tablespoons smooth Dijon mustard
2 - 3 garlic cloves
Pinch of salt
4 dried chipotle peppers soaked in hot water for 30 minutes, then minced or smoked paprika
100ml/½ cup apple cider or white wine vinegar
70ml/¼ cup of olive oil
3 carrots, grated
½ white or green cabbage, finely sliced
4 - 6 spring onions, green and white parts, finely chopped

Method
Make the vinaigrette. Mix the mustard, garlic, and salt in a food processor, then blend in the chipotles and vinegar. While the processor pour in the oil slowly and steady stream. Put the cabbage into a large bowl, and add the grated carrots and onion. Pour the vinaigrette over the vegetables and toss well. Taste and add more sauce and salt if your wish. Let the slaw sit for a couple of hours or longer before serving. The slaw will keep in the fridge for up to 5 days.

Καπνιστό... λάχανο με μίνι ξεροψημένες πατατούλες!

Ancho peppers and chipotle peppers

Η Mangocheeks αντί να φτιάξει τη γνωστή σαλάτα coleslaw με λάχανο, καρότο, κρεμμυδάκι και μαγιονέζα, δοκίμασε να την κάνει πιο πικάντικη εμπλουτίζοντάς την με μεξικάνικες καυτερές πιπεριές chipotle που δίνουν ένα... καπνιστό αποτέλεσμα στη γεύση! Αν δεν βρούμε τις συγκεκριμένες πιπεριές σε κάποιο delicatessen μπορούμε να χρησιμοποιήσουμε πάπρικα. Πήρε λοιπόν μικρές στρογγυλές πατατούλες, τις έβρασε, τις στράγγιξε, τις αλατοπιπέρωσε, τους έριξε λίγο λαδάκι, τις πάτησε ελαφρώς να ''σπάσουν'' και τις έβαλε για λίγο στο φούρνο. Ισα ίσα να ξεροψηθούν. Τις συνόδεψε με τη σαλατούλα και... έτοιμο το βραδυνό! 

Υλικά
2 κ.σ. απαλή μουστάρδα Dijon
2 - 3  σκελίδες σκόρδο

αλάτι
4 αποξηραμμένες chipotle πιπεριές μουλιασμένες σε καυτό νερό για μισή ώρα και μετά τις λιώνουμε ή, χρησιμοποιούμε πάπρικα (κατά βούληση)

½ κούπα μηλόξυδο ή λευκό ξύδι
/¼ κούπας ελαιόλαδο
3 καρότα τριμμένα
½ λάχανο τριμμένο
4 - 6 φρέσκα κρεμμυδάκια σε λεπτές φετές

Μέθοδος 

Φτιάξτε τη βινεγκρέτ. Αναμίξτε τη μουστάρδα, το σκόρδο και το αλάτι στο μούλτι και μετά προσθέστε τις καυτερές πιπεριές ή την πάπρικα και το ξύδι. Χτπυπήστε τα καλά και προσθέστε σιγά σιγά το ελαιόλαδο. Βάλτε το λάχανο σε μεγάλο μπωλ, προσθέστε το τριμμένο καρότο και το κρεμμυδάκι. Περιχύστε τα με την βινεγκρέτ και ανακατέψτε να πάει παντου. Προσθέστε αλάτι η σάλτσα αν χρειάζεται. Αφήστε τη σαλάτα να μείνει κανα δυο ώρες πριν τη σερβίρετε. Θα κρατήσει στο ψυγείο για περίπου 5 μέρες! Όσο για τις πατατούλες, τα είπαμε πριν! Εγώ βάζω και λίγη ρίγανη στις πατατούλες όταν τις βάζω στο φούρνο....

Salmon with Creamy Mustard Sauce

Serves: 4 

Ingredients:

4 (8-ounce) salmon fillets
½ cup plain yogurt
2 tablespoons Dijon mustard
1 tablespoon whole-grain mustard
2 teaspoons capers, rinsed
Salt and pepper to taste
Chopped dill for garnish

Preparation:

1. Preheat the oven to 450 degrees F. (220 C)
2. Line a sheet pan or baking dish with parchment paper. Place the fish fillets skin side down on the sheet pan. Sprinkle generously with salt and pepper.
3. Combine the yogurt, mustards, and capers in a small bowl. Spoon the sauce evenly over the fish fillets, making sure the fish is completely covered.
4. Bake for 10 to 15 minutes, depending on the thickness of the fish, until it’s barely done. You can tell the fish is done if it flakes away easily when prodded with the tines of a fork. 

Σολομός με σάλτσα μουστάρδας

Σερβίρει 4

4 φιλέτα σολομού
½ κούπα γιαούρτι
2 κουταλιές της σούπας μουστάρδα Dijon
1 κουταλιά μουστάρδα με κόκκους
2 κ.γ. κάπαρη
Αλάτι και πιπέρι

Ψιλοκομμένος άνηθος για γαρνίρισμα

1. Προθερμάνετε τον φούρνο στους 220.
2. Βάλτε μια λαδόκολα σε ένα ταψάκι. Τοποθετήστε τα φιλέτα με την πέτσα στο κάτω μέρος. Αλατοπιπερώστε.
3. Ανακατέψτε το γιαούρτι, τις μουστάρδες και την κάπαρη. Καλύψτε με την σάλτσα τα φιλέτα.
4. Ψήστε 10-15 λεπτά (αναλόγως και πόσο λεπτά είναι τα φιλέτα).Δοκιμάστε αν η επιφάνειά του ξεφλουδίζεται με ένα πιρούνι. Τότε είναι έτοιμο.

Πόσα χρόνια έχετε να κάνετε πικ νικ; Όχι πολλά;... Εγώ πάλι από πιτσιρίκι... Κι όμως, ψήθηκα τώρα να πάρω ή να φτιάξω ένα καλαθάκι για πικνικ, να το γεμίσω κεφτεδάκια, πίτες, σαλατούλες και ντιπ, μερικές πίτες τορτίγια, χούμους, φαλάφελ και  να πάρω και ένα θερμός με φρέσκια κανελάδα και να την κάνω για την πιο κοντινή παραλία...

Ναι μόνη μου. Δεν μοιράζομαι το φαγητό ....

Παρόλα αυτά βρήκα πολύ προχώ την ιδέα να το βάλω το φαγητό σε μερίδες μέσα σε βαζάκια. Ούτε λάδι (να τρέχει) ούτε ζημιά! Σε κάθε βαζάκι κάτω κάτω χούμους -για παράδειγμα- και απο πάνω τα φαλάφελ (ο,τι πάει μαζί και τρώγεται μαζί, μπαίνει ένα βαζάκι!)!
Επίσης αυτός ο τρόπος σερβιρίσματος ορεκτικών που βλέπετε στην φωτογραφία, μπορεί να σας χρησιμεύσει και στο πικ νικ, αφού και κόβεις και τρώς πάνω στο ξύλο κοπής και είναι πιο όμορφο απο τα πλαστικά πιατάκια! Ναι, είναι βαρύ, αλλά εξακολουθεί να μ' αρέσει για όλες τις χρήσεις. Aπο το αγαπημένο μου Kitchn.com

Octopus with sun-dried tomatoes and Ouzo! Simply delicious! Χταποδάκι με λιαστές ντομάτες και ούζο! Πεντανόστιμο και άκρως καλοκαιρινό!

It's official it's summer...!!! And every Greek taverna cook the ultimate summer dish; 

Fresh Octopus! Cooked in every possible way you can imagine (dried, cooked with wine, with vinegar, with tomatoe sauce, baked, fried etc) it's one of the most delicious dishes, always served with a unique fresh Greek salad and french fries...oh!!! I almost forgot; And a glass of Ouzo!!!

Χταποδάκι, ουζάκι, άμμο στα πόδια, σημάδια απο το μαγιό την πλάτη, αλάτι στις βλεφαρίδες και ένα χαλαρό χαμόγελο μονίμως στο πρόσωπο... Αλλιώς δεν είναι διακοπές. Σωστά;

Χταποδάκι με λιαστές ντομάτες και ούζο

μια συνταγή - λιχουδιά από τον σεφ Βαγγέλη Δρίσκα

1 μέτριο χταπόδι
1/2 φλιτζάνι ούζο
3 αστεροειδείς γλυκάνισους
1 ξύλο κανέλας
10 κόκκους μπαχάρι
6 λιαστές ντομάτες
2 κουτ. της σούπας κάππαρη
ελαιόλαδο
ξίδι μπαλσάμικο
1 ματσάκι ρόκα
4 φέτες χωριάτικο ψωμί

Βάζετε το χταπόδι στην κατσαρόλα με τα μπαχαρικά και το ούζο, σκεπάζετε και βράζετε σε χαμηλή φωτιά για 1 ώρα περίπου μέχρι να μαλακώσει. Το στραγγίζετε και το κόβετε σε μικρότερα κομμάτια.
Αλείφετε τις φέτες του ψωμιού με ελαιόλαδο, τις ψήνετε στη σχάρα ή στο φούρνο και τις κόβετε σε τέταρτα.
Βάζετε στο μπλέντερ ή στο πολυμίξερ τις λιαστές ντομάτες, την κάππαρη, 3 κουταλιές της σούπας ελαιόλαδο και 3 κουταλιές της σούπας μπαλσάμικο. Πολτοποιείτε και αλείφετε με το μείγμα αυτό τις φέτες του ψωμιού.
Βάζετε λίγη ρόκα επάνω και ακουμπάτε τα κομμάτια του χταποδιού.

Octopus with sun-dried tomatoes and Ouzo
recipe from top Greek chef Vaggelis Driskas

1 medium octopus
½ cup ouzo
3 star anise seeds
1 cinnamon stick
10 all spice berries
6 sun dried tomatoes
2 tbsp capers
olive oil
balsamic
vinegar
1 bunch rocket (arugula)
4 slices of village style bread

Put the octopus in a pot, together with the spices and the ouzo, cover and cook over a low heat for 1 hour until it is soft. Strain it and cut it into smaller pieces.
Drizzle the slices of bread with olive oil, grill them and then cut them into fourths.
Place the sun-dried tomatoes, capers, 3 tablespoons of oil and three tablespoons of balsamic vinegar in a blender or food processor. Puree the mixture and spread on the bread.
Place some rocket leaves on top and cover with pieces of octopus.

Donkey's Bean Dip and Guacamole recipe! Τρώμε μεξικάνικο! Συνταγή για γουακαμόλε και ντίπ φασολιών!

Donkey's Guacamole Recipe

2 ripe avocados

1/2 red onion, minced (about 1/2 cup)

Half jalapenos pepper

2 tablespoons cilantro powder

lemon juice from 2 lemons

salt

freshly grated black pepper

Mix everything with mixer machine till you make a green rich cream.

Γουακαμόλε απο το Donkey!

2 ώριμα αβοκάντο (μαλακά και λίγο μαυρισμένα εξωτερικά)

1/2 κρεμμύδι πολτοποιημένο

Μισή jalapenos πιπεριά (θα βρείτε ψιλοκομμένη σε βαζάκι στο σουπερμάρκετ, βάλτε λίγο λίγο, είναι καυτερούτσικη... δοκιμάζοντας λοιπόν για την ποσότητα)

2 κ.σ. κόλιανδρο σκόνη

χυμός λεμονιού απο δύο λεμόνια

αλάτι και πιπέρι.

Βάλτε τα όλα στο μούλτι... και... βουαλά!

 

Donkey's Bean Dip

 

1 can of black or red beans (American beans)

Half cup Olive oil

1 green sweet pepper

salt

pepper

1 tbls smoked sweet paprika

 

Rince well the beans. Mix everything with a mixer machine till you make a thick mixture. Taste to add more salt or pepper.

Dip από κόκκινα φασόλια!

1 κονσέρβα κόκκινα φασόλια (American beans)

μισή κούπα ελαιόλαδο

1 πράσινη πιπεριά

αλάτι, πιπέρι

1 κ.σ. πάπρικα γλυκειά

 

Ξεπλύνετε καλά τα φασόλια κονσέρβας. Βάλτε όλα τα υλικά στο μούλτι και πολτοποιήστε τα. Προσθέστε αλάτι, πιπέρι. Έτοιμο!
