TRADITIONAL RECIPES FROM GREEK ISLANDS! ''MONKS'' FROM NAXOS ISLAND! ΠΑΡΑΔΟΣΙΑΚΕΣ ΣΥΝΤΑΓΕΣ ΑΠΟ ΤΑ ΕΛΛΗΝΙΚΑ ΝΗΣΙΑ! ΚΑΛΟΓΕΡΟΙ ΝΑΞΟΥ!

Οι συνταγές από το πάρτυ του Donkey δεν τελειώνουν! Κι αυτό, γιατί μεσολάβησε το break του καλοκαιριού και χίλια δυό άλλα που με κράτησαν μακριά από την κουζίνα και τον υπολογιστή. Σιγά σιγά θα ανεβάσω όλες όσες δεν έχουν ακόμη δημοσιευτεί!

O  Γιώργος Δέτσης ήρθε στο πάρτυ και μαγείρεψε Καλογεράκια Νάξου...αλλιώς. Όλες τις λεπτομέρειες και παραλλαγές θα τις δείτε και στο blog του. Εγώ πρόλαβα και φωτογράφισα τα μικρά αριστουργήματα με τις πιτούλες!!! Έγιναν ανάρπαστα τα καλογεράκια του. Μπράβο Γιώργο! Ήταν υπέροχα!!!

Ingredients


2 eggplants/aubergines, cut lengthwise, stored in water with some salt for half an hour
olive oil, enough for frying
a pinch of grated nutmeg
a pinch of grated cinnamon
4 beef fillets, cut in pieces
1 full teaspoon tomato puree
4 medium tomatoes (cut in slices)
2 medium red or yellow onions, cut in chunks
salt and white pepper to taste
some basil leaves
Greek Gruyère Cheese, cut in thick slices
some pita bread

Take the eggplants off the salty water, pat them with absorbent paper, add salt and pepper all over them and fry the eggplants in hot olive oil until both sides turn golden brown .
Lay the eggplants into an oven pan (cut side on top). Sprinkle with some grated nutmeg.
Cut the beef fillets in small thin pieces.
Saute the onions in hot olive oil. Add salt, pepper and cinnamon. Add a good splash of hot water and the tomato puree. Add the beef pieces, and some basil leaves. Let it cook and add salt and pepper if needed.
When the beef is properly cooked, lay some beef with sauce over each eggplant. Cover each eggplant with a slice of tomato, cover each tomato with a slice of Gruyère Cheese. Preheat the oven at medium (200 C degrees) temperature and cook the ''MONKS'' until the cheese melts.You can serve it as it is or you can put each MONK into a cut pita bread just like in the photos!

  1. hey I didn't know there's a thing like Greek Gruyere cheese! How does that taste? Similar to our Swiss one? We love aubergines and I will give this recipe a try. Thanks for sharing.
